2 tsp butter2 stalks of celery, chopped1 small onion, chopped1 carrot, peeled & chopped2 cloves of garlic, mincedEight cups rooster broththree cups water1 small Parmigiano Reggiano Rind, non-compulsory18 oz spinach cheese tortellini1/2 tsp contemporary floor pepper1/2 tsp floor nutmeg2 cups child spinachsalt to styleParmigiano Reggiano, grated (non-compulsory)

In a big pot, soften the butter over medium-low warmth.

When melted, add the celery, onion, carrot & garlic.
